Date and place of birth
about 1780
Names of parents
Date and place of baptism - if applicable
Details of each of his or her marriages - if any
3 Jan 1803 St. Martin's North Stoke Somerset Thomas Wilton
Occupation(s) - if any
Addresses where they lived (including county if in UK) - and please list which censuses you have or haven't found him/her on (if s/he lived in census times!).
1841 North Stoke Somerset
husband inherited a cottage and some land in North Stoke from his father in 1805 so I assume they lived there. All children baptised in North Stoke (free reg) Thomas was the parish clerk and local school master.
Date, place and cause of death
Date and place of burial.
20 January 1843 age 62 St.Martin's North Stoke Somerset
Details of will / administration of their estate - if applicable
Memorial inscription - if any

Does the 1841 census say whether or not she was born in the county of Somerset, Anne?

It is very faint but looks like no. North Stoke is very close to the Somerset Gloucestershire border and also within walking distance of Wiltshire. There is a large Hopes family in North Stoke and Weston Bath but no sign of Hester. The parish record gives bride's parish as North Stoke,

Changing the county I have just found a baptism for Hester Hopes in Bitton Gloucestershire which is the next parish but over the border in 1783. Parents William and Mary. The age is a couple of years out but it is an unusual name so do you think I should go with it?

Also 20 July 1772 North Stoke marriage William Hopes to Mary Rose.

I would try to find something to prove it's the same person, yes.
