Lincs to the Past has the following baptisms at Wrangle:
Dec 9 1821 Anne, daughter of Absalom and Mary Coupland, Wrangle, farmer (image no 27)
May 10 1824 Sarah, details as above (image no 33)

Then there is a burial 28 Jun 1827 Mary Coupland of Wrangle, age 41. (image 23)

So she was born about 1786-7 (if this is the right Mary).

Looking at the 1851 census, there is Absalom age 48 who is the head of household, Absalom age 81 widowed father, and Sarah, sister, whose age has been transcribed as 46 on ancestry but I think it could be 26. So, checking back for Absalom jr's baptism to make sure his mother isn't Mary - no, his parents are Absalom and Martha (baptism 7 Mar 1803, image 21).

So is Mary the second wife of Absalom sr?

Ah yes, thankfully someone has the marriage on their ancestry tree, and I've checked it on Lincs to the Past:
1 Jun 1817 Freiston, Lincs
Absalom Coupland of Wrangle, widower, and Mary Saywell OTP, widow. Witnesses William Evison and John Francis.

So this looks likely to be her first marriage (taken from Lincs to the Past image no 11):

Freiston 30 May 1805 John Saywell bachelor otp and Mary Howard of the parish of Skirbeck, a Minor, were married in this church by licence, with consent of Edward Howard, her father, witnesses Rebbeca Rabey(?) and Nat Howard.

And there is a burial at Freiston (image 95 of the General Register) John Sawell was buried May 10 1810 aged 28.

The images for the Skirbeck parish registers don't seem to be available on Lincs to the Past, so I can't look on there for Mary's baptism.

Someone on ancestry has a Mary Howard in their tree, born 27 Sep 1785 Leake, Lincolnshire, parents Edward and Mary. And there is a baptism on that date at Old Leake on Lincs to the Past. I wonder if we can prove this is the same Mary who was living in Skirbeck in 1805.

Thanks very much for all that, Kite. I was guessing Mary's likely DOB from those of Ann and Sarah in the 1820s - it had never occurred to me that it might have been her second marriage! I have a Martha Howard on another (fairly close) branch of my tree who was also in the Wrangle area - so there's the off-chance she might be related to Mary, but I wouldn't bank on it.

Just a thought - if Mary was recorded as a minor in 1805, wouldn't she have had to be born later than 1785? Or did you have to be older than 20 to marry without parental permission?
