Often because the baby was too ill to be brought to church, but in some places, families, times, it seems to have been common when not in that situation. There is some information in here:

Regarding the marriage in post #322, I'm pretty sure I've found the Emma Crane in question. I was wondering why her age fluctuated so greatly between census records; it's correct in 1911, which matches the Newington birth I found. I suspect the reason for the variation is that she was 9 years older than her husband.
birth baptism marriage The marriage (image linked in post #322) states that Emma's father is Thomas William Crane, shoemaker; I found an 1851 Newington census in which the father is William Crane, shoemaker, and has a daughter named Emma of the correct age. Emma is accounted for after 1891, but still no luck in 1861, 1871 or 1881 (at which point she'd be Emma Davis, having married George Joseph Davis in January 1881). So, we're looking for an Emma Caroline Crane born December 1846 in Newington, whose father is named either Thomas or William and is a shoemaker. It may well be that his first name was Thomas but he dropped it in favour of his middle name. Fairly certain her death is: Deaths Mar 1933 Davis Emma C 86 Southwark 1d 88 Did a GRO check, and the middle name is indeed Caroline.

We only need an 1851 census for Ellen now, as she died in 1860. She was born in August 1829 (not entirely sure where) and baptized in Bloomsbury in May 1838. Baptism link is above. She married Matthias Davis in Bethnal Green in 1852, so I'd expect her to be in roughly that area in 1851.
