Margaret is down as Parrott on the 1851 census but not with her family, and her birthplace is given as Preston:

Thanks for that, Kate. She's probably not the right one if she was born in Preston.

I've e-mailed Bury Archives as they have lots on a Porritt family, although I can't see any connection. My Mary Porritt married Charles Alexander at St Mary's, Bury, in 1850.

I never found Mary Porritt (my 2x-great-grandmother) in the 1841 Census.
Perhaps it's time I looked again.

This could be the same Margaret in 1871 and her birthplace is now Manchester:

Catherine Do " 9 Scholar Gibralter

Catherine's birthplace would explain why I can't find the Wilsons in 1861!

Alice Wilson, age 19, weaver, daughter of late Samuel Wilson, spinner, marries a William Sumner 5 Oct 1872 in Preston, according to Lancashire OPC, so it looks like the right family.

In 1881 Catherine is a lodger with a family called Plumb:

and these are the Sumners:

There is a Margaret Wilson, 48, widow, born Manchester, in prison in Clerkenwell, London, but her occupation is domestic servant (cook):

Ancestry's suggestion for Elizabeth born 1831 is a marriage to James Southworth. Lancs BMD has this as James Southworth / Elizabeth Porrit in 1850, Preston Register Office or Registrar Attended. This looks like the couple in 1851 and Elizabeth is the right age (19) but her birthplace is given as Walton le Dale:

The birthplace on that census was dittoed and she is listed in amongst James' family so the birthplace on the 1861 census is more likely to be right and it is Manchester:

Ralph's birth on Lancs BMD shows MMN as Porritt to confirm this is the right couple.

In 1871 James and Elizabeth also have a daughter Margaret, 9, and sons Samuel, 7, and Peter, 4.

1871 census

Lancs BMD has an Alice Southworth, MMN Porritt, born 1856 Preston, and an Alice Southworth death in 1858 in Preston, age 2. So I would reckon this is the right Elizabeth as it means she named a daughter after her mother.

I have a Porritt match in my DNA matches and have made contact. The person is descended from Alice and Samuel and the Southworths.

I have been researching more and have found

This has found two further sons for Alice - James and Richard.
Also the family moved to Preston after living at Waterside, Derbyshire, for a while. So the family were close together.

I have found so much more, but not what happened to Ann Porritt and Joseph Parrott. I still haven't found a burial for Samuel Porritt senior or his baptism.

Lancashire OPC has a marriage 10 Mar 1856 at Immanuel, Oswaldtwistle: John Clayton, full age, labourer, widower, abode Church Bridge, son of John Clayton, deceased, weaver, and Ann Porritt, full age, spinster, abode Church Bridge, daughter of Samuel Porritt, deceased, weaver. Witnesses John Gaskell and Mary Rothwell.

This could be them in 1861:

Edit - found the marriage entry on ancestry and Samuel's occupation is actually Mechanic, so it fits with your Porritt family:
