I'm not sure how much research you have done into the name Philbrook but if it is derived from the place name Felbrigg, then I would have thought it quite possible that when people started to use surnames, people who had moved from Felbrigg to another place might acquire that surname, and so they wouldn't all necessarily be descended from the person you mention.
