I'm 99% sure that the father's name on her marriage certificate is incorrect and that she was the daughter of Matthew Etherington, in which case she was born 7 Jan 1853 at Woodplumpton, parents Matthew Etherington and Mary nee Rigby, and baptised 20 Feb 1853 Woodplumpton, living at Cunliffe Fold, Salwick, Lancs in 1861, Cuncliffe House, Clifton with Salwick in 1871 and Square Lane, Woodplumpton in 1881. There doesn't seem to be an Ellen with father William who fits the information on the marriage certificate and the 1891 - 1911 censuses, but if only I could find a piece of evidence to prove the two Ellens are one and the same. Matthew Etherington died in 1875, so his will doesn't help, but the family say that Ellen's daughter married her cousin, which is right (well, second cousin) if Ellen's father was Matthew.
