FamilySearch has a baptism for an Ann Smith 20 Sep 1821 at Hinckley, parents Joseph and Elizabeth, in addition to those 1818 baptisms mentioned in the Ann Smith thread (the 1821 one is mentioned there too but not the mother's name). So that one is another possible.

Other children of Joseph and Elizabeth (if it is the same couple all the way through, of course):
Joseph 1816
Elizabeth 1819
Samuel baptised same date as Ann in 1821 and died the same year.

I suppose we really need to see the baptism register and see the occupations to have any chance of finding the right one, though.

Right, just realised they are on FreeREG with occupations:
18 Dec 1814 - Ann, d of Joseph & Lucy, labourer
16 Jun 1818 - Ann, d of Joseph & Lucy, labourer
10 Aug 1818 - Ann, d of Joseph & Sarah, FWK
20 Sep 1821 - Ann, d of Joseph & Elizabeth, FWK.

I think it is more likely for a labourer to become a coal carrier than for a FWK, what do you think? (Edit - oh, except that your Ann is a FWK?) I'll look through the rest of the Hinckley baptisms on there to see if there is a coal carrier anywhere.

Aha!

Baptism 9 Jul 1827 - Thomas, son of Joseph & Lucy Smith, abode Hinckley, occupation Coal Carrier!

Also Samuel 11 Sep 1829, same details.

Then there is an Eliza 18 Jan 1832, parents Joseph & Lucy, abode Hinckley, FWK.
George 8 Nov 1833, parents Joseph & Lucy, abode Hinckley, Coal Carrier.

FreeREG does have some Hinckly burials but there is a gap for a few years after 1834 so Joseph could be in there.

There are possible death registrations Jul-Sep 1837 and Jan-Mar 1840 in Hinckley district.

I have this on the Ann Smith page too. Samuel aged 21 and mother Lucy (married not widowed)

There are quite a few possible Joseph Smith deaths between 1851 and 1861 in Hinckley. And of course loads more in other districts! I haven't managed to find him on either the 1841 or 1851 census though, nor Lucy in 1841.
