His wife was Elizabeth. I haven't yet found a marriage for them.

Elizabeth baptised as Eliza 17 August 1729 at St Bartholomew, Haslemere, Surrey
Mary baptised 8 October 1731 at St Bartholomew, Haslemere
Ann baptised March 1732/33 at St Bartholomew, Haslemere
James baptised 21 December 1737 at St Bartholomew, Haslemere
Sarah possibly born 27 December 1739 and baptised 4 January 1740 at St Lawrence, Seale, Surrey (this fits in with the order in which James lists the children in his will)
Joan baptised 23 October 1743 at St Peter, Ash, Surrey
John baptised 10 November 1745 at St Mary, Frensham, Surrey

Yeoman (from will)

Addresses
Churt in the parish of Frensham, Surrey (from will)
Also the baptisms of some of his children state he was from the parish of Frensham.

Ancestry have him incorrectly as from Christchurch. It should say Churt in the parish of Frensham.

His will also mentions a daughter Sarah, and says he had brothers John Hurst of Headly in the county of Southampton and Richard Hurst of Elsted in the county of Surrey, both husbandmen.

There is a James Hurst / Elizabeth Langford marriage 6 Dec 1733 Cathedral Church of the Holy Trinity, Winchester, Hampshire, and a James Hurst / Elizabeth Duxbury marriage 22 Dec 1733 Bosham, Sussex, both on FamilySearch.

Ah, I see Mary was baptised 1731, so those marriages would all be too late.

Yes, I have the brothers and Sarah. I forgot to add her! I was in such a rush as my computer was due to close down for Windows updates.

John Hurst of Headley seems to have moved to Frensham later on. He only appears at Headley for the baptisms of three of his children.
He died in 1768 and his will mentions the children that were baptised at Headley - Ann, Sarah and John. There was also a Mary, who might have been baptised at Thursley in 1740.

I've updated the information in post #1 to give the children's baptisms. Many of the Frensham residents had children baptised at Haslemere.

Thanks for looking at this, Kate. The problem with this part of the country is that it is where three counties, Surrey, Sussex and Hampshire, meet.
