She is born in county on the 1841 census.

Jonathan Thomas married Hester Etherington 6 Feb 1823 at Wisborough Green, Sussex. On the 1851 census Jonathan and Hester Thomas are living at Parish House, Kirdford, and Hester is 48 born Sussex Wisborough Green.

I can't see a baptism for Esther / Hester at the moment, but there is an Amelia Etherton born 29 Apr 1806 and baptised 21 May 1826 at "Independent or Calvanistic Independent, Wisborough Green, Sussex", parents Richard Etherton and Ann Parkhurst.

This is all from FamilySearch. They also show a Catherine Etherton baptised on the same date at Wisborough Green, parents Richard and Ann, with a link to the BMD Registers site (where you would have to pay to view the image). There is also a Mary Etherington born 29 Dec 1809, and baptised 28 Aug 1838 at Henfield, Sussex, parents Richard and Ann.

On the 1841 census there is this family at Coat Tree House(?), Wisborough Green:
