Probably doesn't help, but this is the 1861 census entry for Penywaun, Trecastell:
David Thomas Head Mar 75 Farmer Llanarthney Car Ann Do Wife Mar 87 Farmer's Wife Llanarthney Do I couldn't find Penywaun in 1871, only a few entries for Penywain. |

And again, probably not connected, since this Hannah's age is way out from the one you found in 1881, but posting this up just in case:
1871 census Tymawr, Trecastell, Llanarthney, Carmarthenshire Hanah Walters Head Unm 25 Collier's Widow Carmarthen Llanarthney John Stephens Son 8 Do Do |

Getting increasingly tenuous here, but there is a John Stephens, farmer, born about 1826 Llanarthney, on the censuses up to 1891, with a wife named Rachel, living at Llanddarog, Carmarthenshire.

Interesting. Further delving turned up the following 1861 Piece 4134 Folio 79 Page 14

I'm going to look at the possibility of John Walters being one such child. |

FMP has the baptism of Thomas, son of Thomas Griffiths and Hannah Walter, 22 Dec 1846 at Llanarthne. Nothing filled in for parents' abode and occupation.

I still can't see John's baptism, but there is a Harriett, daughter of Hannah Walters, baptised at Llanarthne 9 Jul 1861, abode Volgastell.

Thanks kiterunner
Looks like Hannah was a busy woman. Will continue to dig and attempt a sideways approach to the elusive John Walters so that I can creep up on him. |
