Default DNA ethnicity accuracy?

So I finally got my DNA results back, after a false start and having to resubmit a sample.
My first question is how accurate are the ethnicity percentages?
All seem to match up with my research, except I'm a bit thrown by the Chinese and South East Asian percentages.
5% Southern China
1% Northern China
1% Vietnam

Second question is: are the percentages meant to add up to 100%?

Which company or website was this with? Also, the percentages will all be rounded up or down, so adding the rounded values up may not make exactly 100%.

Sorry, I should have mentioned it was Ancestry.
And also I have realized my maths is quite bad, it did add up to 100%.

Okay, I don't think any of the companies can claim to be completely accurate in their ethnicity estimates yet, because it depends on how many people they have in their "reference populations" and how sure they can be about the ancestry of those people. I would think that you must have very roughly about 6% Chinese / South East Asian ancestry but they may not have got the exact countries or areas within that region very accurately.

Thanks Kiterunner for the explanation. That 6% is what is confusing me. There is only one possible line it could possibly come through in.
Would 6% be accounted for in 2x great grandparents?

Yes, because I have about 12.5% Jewish DNA and that is from one g-grandparent, so 6% could be from one 2xg-grandparent.
