I assume you have thse census and just haven't listed them.

1841 Census
http://search.ancestry.co.uk/cgi-bin...s=&gst=35&so=3
Class: HO107; Piece 276; Book: 5; Civil Parish: East Stonehouse; County: Devon; Enumeration District: 5; Folio: 13; Page: 20; Line: 19; GSU roll: 241335.

1851 Census - I assume Simeon was at sea or somewhere else on this one
http://search.ancestry.co.uk/cgi-bin...28728&recoff=9
Class: HO107; Piece: 1880; Folio: 187; Page: 76; GSU roll: 221029.

1861 Census
http://search.ancestry.co.uk/cgi-bin...ki1861&indiv=1
Class: RG9; Piece: 1446; Folio: 7; Page: 8; GSU roll: 542814.

Edit to say:
realise now why they weren't listed.

There a three documents on Ancestry for the navy records for a Simeon Ruby for:-

1845-1855 Crimean War - ship Belleisle
http://search.ancestry.co.uk/cgi-bin...251&recoff=4+5

1856-1860 Second China War - ship Esk
http://search.ancestry.co.uk/cgi-bin...322&recoff=4+5

1873-1874 Third Ashanti War - ship Active

http://search.ancestry.co.uk/cgi-bin...298&recoff=4+5

Edit to say:
put links in don't know if it's your Simeon not sure how you would tell without other documentation also I have only just seen your other thread about not being able to find the census.

Thanks Maggie.

I hadn't seen those navy records before. There was a nephew with the same name in the navy as well, but I'll get them anyway.

By the way I noticed another Ruby family with a son named Rueben I don't know if they are related but there are Navy records for a Rueben Ruby too on Ancestry. They're unusual names in so much they're not common or used a lot.
