Thanks to my "new" Steel cousin I now know her birthdate is completely wrong. Must have been because the 1841 census gives rounded ages and that was one of the first things I found when I was new at this - 1851-1891 her birthdate is consistantly 1810.
My new Steel cousin has sent me Mary's funeral card with her birthdate on it - 6th May 1810.
