I see that Joseph's son John is age 3 months on the 1841 census and birthplace is Tiverton on the 1851 when he's 10 - could he be John Thomas Hellyer Gibbs whose birth was registered Jan-Mar 1841 Tiverton? If so then his birth certificate would give you Mary's maiden name though of course it might then turn out that Mary is Joseph's second wife, which won't be so useful if your OH's ancestor is one of the older children. But it would certainly help in looking for Joseph and Mary's marriage.

Unless we can find a Joseph Gibbs marrying a Mary Hellyer...

Also Thomas looks likely to be Thomas Hellier Gibbs whose birth was registered Oct-Dec 1847 Tiverton, so Hellyer / Hellier must surely be a family name of some kind?

OH's ancestor is Henry, who was born 2 years before Thomas and there is a 5 year gap between Henry & John.
I think I discounted the Hellyer/Hellier Gibbs a while ago as the mother wasn't born in Wellington, Somerset. I'll have to check my notes when I get back on my PC. Thanks for refreshing my memory about them.
